So, I had some smoked salmon that needed eating, but wasn’t enough to feed 3 mouths.
I remembered eating salmon pasta, but then it was in a creamy sauce that didn’t feel very good. I then remembered to cherry steak sauce. Huh, I wonder how that would work out with pasta.
Well, take away the cherries (didn’t have any) and it works magnificently.
- 2 onions quartered, then sliced.
- 1 teaspoon honey
- 1 teaspoon mustard
- One pack smoked salmon (mine was about 200g) diced
Quarter and then slice the onions (add more according to taste / quantities made) and brown them. While you are browning the onions boil some vegetable broth in a different pot. Add the salmon, the honey and the onions to the skillet and stir. Once the broth boils, add your favorite pasta en take about 1/2 cup of broth out. Add the separated broth to the skillet, and leave at low heat.
Once the pasta is cooked to your taste, drain, add a slab of butter, the onion/salmon mix and stir.
Conclusion: Fairly shallow flavor, but allows the salmon to stand out. Next time I’m using cherry jam instead of honey/mustard to contrast the salmon’s savory taste.
